A bit of history: Roman emperor Valerius Probus (232-282), a century and a half after Domitien destroyed the Aquitaine vineyards, converted his army of legionaries into colonists that replanted vines in furrows dug inside calcareous rocks. Visitors can still notice traces of this method in Vieux Sarpe, which is one of the most ancient and famous vineyards of Saint-Emilion.
